Bananas for Coconuts

This is how we create a new drink – Me – “We have too many bananas. What do I do with them now? I can eat only so much banana bread.” Brian – “Do what you always do – make a drink!” So the quest began! Like so many of our drinks, they start with what we have an abundance of! Right now we have tons of bananas and our coconut palm is throwing off ripe coconuts (not a time to stand under it!) So I threw some bananas in the freezer and processed some coconuts into coconut milk. Don’t worry if you don’t have your very own coconut tree…coconut milk is easy to purchase in almost any grocery store.
This is a tropical dream! Creamy, sweet and delicious! Close your eyes and transport yourself to your fantasy beach. It's easy to double or triple this recipe!
Ingredients
1 frozen banana
1 shot toasted coconut rum (dark rum or coconut rum would work too)
1 shot Frangelico (Italian hazelnut liqueur)
1/2 cup coconut milk
2-3 ice cubes
Instructions
In a blender combine all ingredients and blend until frothy. Pour into your favorite tiki glass and top with whipped cream and a maraschino cherry. Don’t forget a little umbrella because life’s too short not to have a supply of little paper umbrellas.
