BBQ Jackfruit Wrap

This is a knock off of the famous local LOKO Wrap, where we first discovered Jackfruit while vacationing on the Big Island. It tastes just like BBQ pork and is so healthy and delicious. They brown it with a blow torch to get it a little brown and crispy. Instead when it's all stuffed, just brown it for a few minutes on all sides in a non-stick pan and it gives it a nice little crisp. If you want to skip this step, it's still delicious and reminds me more of a Taco Bell 7-Layer Burrito, but better! If you do not have or like jackfruit, you can always substitute roasted chicken.

Below is the browned option with the addition of some roasted chicken we had leftover.

Ingredients
Green Jackfruit canned or fresh (if fresh, see Jackfruit Processing)
1 can Black Beans
1 can Refried Beans
Red Cabbage (or green) - gives it a nice crunch
Red Onion
White Rice
Mexican Style Grated Cheese
Wraps (any flavor)
Cilantro or Parsley
Instructions
Warm jackfruit, BBQ sauce, refried beans and black beans. Make white rice. Start laying the middle of the wrap by spreading the warm refried beans, the jackfruit, cheese, and rice (put the cheese in between 2 warm ingredients so it will melt. Then add red onion. Don't fill too much or you won't be able to wrap it up. Cut in half for ease of eating. Garnish with parsley or cilantro, cheese, and more red onion. If you're really hungry and don't care to have it look fancy, just dig in!
