Drunken Pineapple

Our property had about 300 white pineapple plants growing on it when we bought it. We had an abundance of pineapples (all around the same time!) so we had to figure out what to do with them. My husband’s favorite go to is to slice them then and dehydrate them. The sugars concentrate and make a delicious treat – plus with our storage vacuum system we could keep them longer.
My favorite is to peel and thinly slice the pineapple and put in a quart Mason jar. I fill to the top with vodka and let sit in the fridge for a few weeks. It is amazing how the vodka tastes!!!!
You can pour it in a shot glass and sip it or shake it over ice and pour into a martini glass.
Lazy Drunken Pineapple Drink Recipe

Laura here! Those of you who are from Arizona or have a Firebirds where you live, this is the equivalent of the Firebird's famous Double Black Diamond Martini. Unlike Monika, I do not have my farm up and running yet and have no pineapples so I decided to make my own version with canned Pineapple Juice from Costco. I call it the Lazy Drunken Pineapple!
Ingredients
2 shots vodka
2 shots canned pineapple juice
Instructions
Fill a shaker full of ice, add ingredients, shake well (30 seconds or more) and pour into a martini glass. Top with a chunk of pineapple (if you happen to have one laying around)! You can change the proportions to your preference but I find a 50/50 amount of each is just right!
