Hawaiian Pepper and Kona Coffee Bitters

Brigitte, our neighbor and fellow coffee grower, described a favorite drink she once had while traveling. So from her vivid memories of some bar in Seattle with a delicious margarita the quest began to replicate it. She described a smokey tequila mixed (Mezcal) with cucumber and parsley juice. It also had bay leaf used somehow in it. What luck! We have a bay leaf tree growing by the upper bungalow. The bitters in the drink were made with Serrano peppers and espresso beans, but I wanted to use Hawaii hot chili peppers and chocolate habanero peppers because that is what we have growing. The drink turned out great - see the Brigitte-Rita. Below is the recipe for the bitters inspired by that drink.
Ingredients
1/3 cup hot Hawaii chili peppers
1/3 cup roasted Kona coffee beans
1 chocolate habanero pepper
24 ounces of vodka
Instructions
Place the peppers and coffee beans in the jar and fill to top with vodka. After sealing, let the jar rest in a dark place for a couple of weeks. While the magical spicy mixture is being created, start dreaming of different drink ideas to make with it!
