Kona Kolada

Nothing like sipping a delicious Pina Colada while you’re relaxing under a swaying palm tree. Except if you are allergic to pineapples! My lovely niece Danielle, who is highly allergic to pineapple, will be visiting soon and I want to offer her a creamy tropical cocktail to go along with our incredible view of the Pacific. (There is a strong possibility she may never want to leave!!) Thank goodness she can have mango!


We have some very prolific coconut palms so I’m lucky enough to make my own coconut milk, but its easy to find a can in the Asian section of any grocery store. Coconut rum is easy to find too…but lately I’ve been making my own. I’ll post the recipe later, but basically its coconut soaked in rum for a few weeks. Yummy!


I buy the mango nectar at Costco in a gallon jug. Sure I could make my own….but sometimes it is nice having a ready-made juice in the fridge. And after all the hard work making coconut milk, I need something easy.

Ingredients

  • 2 shots coconut milk

  • 1-2 shots coconut rum

  • 1/2 cup mango nectar

  • Slice of lime

Instructions

Mix coconut milk, coconut rum, mango nectar and pour over ice. Garnish with a slice of lime (which I love to squeeze into my drink for a little tartness!)


If you’re like me you’ll start singing “If you like Pina Coladas, getting caught in the rain…..”
