Let's Get Jacked Margarita

Nothing beats a great margarita with a basket of chips and guacamole!* I just made a jackfruit margarita but margaritas can be made with almost any fruit if you follow a simple formula – tequila, triple sec, fruit juice/puree, a sweetener (simple syrup, agave, honey, etc) and something tart (I like lime!). So get creative!! Want it frozen? Just add the ingredients to a blender with ice cubes. On the rocks? Just pour the mixed margarita ingredients over ice. Rimming the glass is optional but can add a layer of flavor. Just rim the glass with a slice of lime and dip in salt, seasoned salt or sugar (which can also be mixed with other flavors!) I highly recommend our smoked habanero salt but it can have a major kick!

Jackfruit is a huge fruit that can be a mess to process (it can weigh up to 100 pounds). When it’s mature (but not ripe) it can be used as a meat substitute. A lot of people mix it with barbeque sauce, but I actually prefer taco seasoning. When a jackfruit is ripe it has fruit pods within the flesh that sorta tastes like an apricot. Since we live on a farm, we have lots of fresh fruit to choose from including jackfruit, but it is available canned at almost every grocery store. Funny story --- we knew we had a jackfruit tree but didn’t know what it looked like. We finally found it and laughed at ourselves for missing a tree with a 50 pound fruit hanging from it! Ingredients:
1 ½ shots tequila
1 shot triple sec
½ cup ripe jackfruit puree
1 shot simple syrup (I used lemongrass simple syrup)
Fresh lime
Instructions:
Add tequila, triple sec, jackfruit puree, a squeeze of lime and simple syrup to a blender. Add about a cup of ice and blend until smooth. Pour into your favorite margarita glass and enjoy!
* For an extra tasty guacamole – mash two avocados add 1/2 cup chopped mango (can be fresh or frozen), 1/2 small onion diced very fine and the juice of a lime. If you want a little kick add some fresh diced jalapeno. Mix well and serve with chips.
