Oven Baked Plantain Chips

Have you been in a grocery store buying bananas and see something very green that looks like an unripe banana? It’s probably a plantain. Used a lot in Caribbean cooking, plantains can be used cooked if unripe or eaten raw like a banana when ripe. We have several plantain trees on our property and my favorite use is oven baked plantain chips.

Preheat oven to 350 degrees.


Unripe plantains do not peel easily like bananas do. I use a paring knife and cut the bottom and top off. I then sit the plantain cut side down on the cutting board and cut the skin off from the top to bottom. To make consistent chips, I use a mandolin to slice the plantains very thin. In a bowl, toss the plantains with just enough olive oil to coat and a couple pinches of habanero salt (or any salt). Line baking sheet with parchment paper and lay plantain chips in a single layer. Bake about 20 minutes (after 12 minutes I rotate the trays). Drain any excess oil on paper towel.
