Smokin' Pineapple Margarita

It was a joyous time when I learned how easy it was to smoke just about anything in an electric smoker!! There are recipes for my Kona Coffee Barbecue Sauce and Kona Coffee Rub on our website. I love to rub a pork butt, wrap it in a banana leaf and smoke it! I didn’t want to only use one tray in the smoker and we had just harvested a ton of pineapples, so I decided put a pineapple in the smoker too! If the pineapple is a little under ripe, just sprinkle a little brown sugar on it.

I serve the pineapple along side the pork for a delicious meal. To get the pineapple ready for the smoker, I slice the whole pineapple in half from top to bottom and cut and cube the flesh. I put the chunks back into the flesh and smoke the pineapple for about 4 hours on a metal pan (to catch the juices). After dinner I was noticing how much juice was left in the remaining flesh and had a few leftover chunks of pineapple. It smelled so awesome! So I pulled out the juicer and processed the leftovers. The juice was incredible! Sweet and smoky. Truly something special. Since then, I’ve filled the smoker with just pineapples so I would have a stash of this delicious nectar.


Ingredients

  • 1 shot Tequila

  • 1 shot Triple Sec

  • 2 shots Smoked Pineapple Juice (from smoked pineapples)

  • 1/2 shot of lemongrass simple syrup

  • Squeeze of Lime

Instructions

Mix all ingredients in a shaker to mix and then pour over an ice filled margarita glass! I opted out of salting the rim because the drink is so delicious as is!
